Since our big bar-b-que on the 24th many people have been asking for my mom's eclair recipe. Most of them tend to look at our blog..because let's face it we just have the cutest child ever :)
For those of you who have never had them before two words...
Chocolate-delicious
Layer bottom of pan with graham crackers (usually in a 13x9 dish)...
(as you can see in the picture this one has another middle layer of gram crackers but we just do one)
Mix the ingredients below in a large bowl...
2 pkg. french vanilla pudding (instant)
1 -8oz cool whip
3 cups of milk
...spread on top of gram crackers
Place another layer of gram cracker ontop of pudding
Heat the following ingredients and then add 1 1/2 cups of powder sugar...
3 Tbs. Hot milk
1/2 c. butter
3 Tbs. Cocoa
Pour chocolate mixture on top and let cool...then enjoy!!!

Mmmm...I always love me a good chocolate recipe. Nolan will be excited to have something new to try instead of my nightly muddy buddies.
